Title: Frozen Lime Pie

Yield: 8 Servings

1 1/4cGraham cracker crumbs
1/4cSoftened butter
1/4cDark brown sugar
1tsCinnamon
1/4tsFresh ground nutmeg
1cnSweetened condensed milk
2cWhipped cream
1/2cKey lime juice
  Grated peel of 2 lemons
  (coarse)

Crust: Preheat oven to 350 degrees. Combine graham cracker crumbs, butter, brown sugar, cinnamon and nutmeg. Spray pie plate with cooking spray and tap crumbs into pan, gently reserve 2 tablespoons crumbs for topping and bake 10 minutes.

Filling: Mix condensed milk with lime juice and fold in whipped cream. Add 1/2 grated lemon peel and blend again. Pour into prepared crust and sprinkle reserved crumbs and remaining half of lemon peel over top. Freeze until firm and cover with aluminum foil. Keep frozen until ready to use and remove from freezer about 5 minutes before serving. After 10 minutes pie will no longer seem frozen. Key lime juice is available in bottles in some large grocery stores and in specialty markets. If it is not available you can substitute with regular lime juice.
